During the daytime the colors are muted but natural, and this is fine. At night the contrast between the dark and the artificial is not so pleasant.
So many customers have fled, perhaps out of fear. It must have seemed strange that Tanaka caught a badly thrown and potentially injurious dart while he was also back in the kitchen.
Tanaka likes, even prefers, mundanity and ordinariness. Tradition more than novelty. Perhaps this was reflected in his "Full English Breakfast" in some unexpected way.
No insouciance intended, no sarcasm, no irony, only appreciation and respect.
