I don't really know why this was suggested as best practice although I suppose it's to do with Knights being more flexible in closed positions.
In General play,I consider Knights to be more valuable because their moves can't be replicated by any other piece.
People also talk about having the "bishop pair" as an advantage
If you only have one bishop the queen can always take over the duties of the missing one.
Seems I have moved off the topic somewhat, but I'm sure better players than me will have some comments to offer

In many openings like kings pawn knight variation the knight moves out first because
bishops cannot attack the pawns at the start of the game

The Knights before Bishops rule of thumb came about because you usually know
where the Knights are going in the opening. f3, c3, c6 or f6. Get one Bishop out
along with the Knights, because you can never be too sure where the second Bishop
is best suited.
It is a rule of thumb which has a good pedigree, though of course chess is not that rigid.

I normally open d4, so no way you can play the Rousseau against me 😉
As black I play g6 against e5 and c5 against e4.
For me the point is not to lose already in the opening. I try to castle earyl as a rule of thumb and be open to attack on both sides.
And yes at my level openings are secondary I should think more before moving and exploit tactical mistales of my opponents (if there are any)
For me any solid opening

My favourite is the lesser known Rosseau Gambit because of the many traps and tricks inside it.
What is yours and why?
Do you know all the about 25 trappy lines by heart?
How many people did you catch with it?
