Tell me where this famous battle took place. I wonder are you confusing the Mongols for the Islamic army defeated by Charles Martel at Poitiers? If so, while the muslims did indeed reach the limit of expansion in Spain, they did not try very hard to extend futher North because, Frankly, there was not enough wealth there to justify the effort. Europeans - mainly the Franks at the time - enjoyed boasting about this little victory against an expedition with limited backing but it did not actually matter much in the scheme to things.
Both the Mongol and the Muslim empires were vastly more affluent and powerful than anything Europe could put together but their armies required an ecconomic incentive to go plodding about the in mud, the rain and the unpleasant cold of our uninteresting little region at the edge of relevance.
