Is it possible to play a game where I'm manually entering the moves (human to human) based on notation from a book?

The book references various plays, and it would be nice to manually plug in plays and then easily reverse them out.

Analyze board might be your best bet, or just get a chess board out.

As trev says, analyze board would be ideal for this exercise.
I see you have completed one game.
Re - visit the game, press analyze board and press the double back arrows which will re set up a starting position.
You can then do whatever you wish with the pieces, including "flipping the board" and moving them back and forwards using the arrows

Taking back and replaying moves on a chess board is tedious.

For this, I'd just download any random chess front end. I prefer Chesspad 1, but other boards are available (including Chesspad 2).
