To which I replied - Demand fashionable hot drink with a nun?
(Fashionable drink - IN T .. nun = SIS, gives demand = INSIST)

I think it's either REMARK or DEMARK, but I don't know whether R.E. or D.E. would be the abbreviation for some kind of worker over there. Since the clue doesn't include anything about commenting (or similar), I'm favoring DEMARK.

Meanwhile (as a sidebar), here's a beginner-level poser for other novices like me who might like to join in:

"This is how the letters line up"

_ U E U E

I did, but I think I should make it more accurate:

* E * A * *
Needs one letter X and a worker.

New clue -
Occupying it wasn't really applicable under canvas.

"worker" most often refers to ANT or sometimes BEE
I did get that and was also thinking "sex worker" -- but the middle T in SEXTANT fell on some kind of Schroedinger's mental blind spot over here.
