I assume you're looking for a word ladder? Not quite as neat as I'd like, but:

hate, hats, eats, ears, errs, eros, gros*, grot, trot, toot, loot, lost, lose, love


* It's in the OED, honest!

If I count correctly, you did it in 14 words inclusive; I had 18. That's the aesthetic of this little pastime, plus, as I like it, stringing together a few relevant stops along the way. It's an alternative airport time-waster.

Not exactly modern though, 'coins', money, 13th century.

However, I think I have you all beat and I dare you to get it in less changes:

Hate, Hote, Lote, Love!

Hote, To command, to join. Lote, To lurk, or lie hidden.

It doesn't include eros though.

To be honest, I was really struggling for words either side of "eros". I assumed we weren't allowed to repeat words, and I wasn't sure about proper nouns. Any other suggestions?

It sounds ok to me, not a proper noun I think.

Found also, dros, hydroponically grown marijuana, plural.
pros, pros and cons, didn't find it hyphenated.

Also found yros but it is an acronym for why, are you retarded or something?

Probably would not be legal for this game.

second letter changes:
Egos plural of ego.
Emos plural of Emo, punk rock

third letter changes:
Eras plural of era, a unit of time.
Ergs, plural of erg, a unit of energy.
Errs, plural of err, to make a mistake.
Erks, a form of conversational stop, in the urban dictionary.

Fourth letter changes:

I couldn't find anything that wasn't an acronym.

How about:

First, hate to eros:

hate hare care cars ears errs eros

Then, eros to love, by backtracking:

eros errs ears cars care cave cove love

Or if you prefer not to cover the same ground:

eros eras bras bias bits bite site sire sore lore love

(That is, assuming that "bras" is acceptable as a word...)
