True, e5 would chase the knight, but it could chase him to the center, plus, white has now wasted the "move first" edge, moved a pawn not just twice, but away from a strong center square. Thus breaking 2 important opening game principles.
The self appointed noob (me) says fortify e4 with d3 and maintain center control.
Well, if you don't want to move the e-pawn, the stronger move would probably moving Nb1-c3, so your light-squared bishop would still have a way out.
