looks delicious. about the only thing I'd leave out is the apple, although it would be next to harmless if left in. what I will not tolerate in potato salad is boiled eggs.

Apple gives it a fresh flavour, absolutely no eggs in it.

With the sour cream, crème fraiche, mayo, mustard - don't you think the egg(s) would get a bit messy?

I will give you the recipe if you would like to try, I usually peel the apple before cutting it in pieces.

One apple to one kilo of potatoes doesn't make so much difference, it just adds a little freshness.

They are not competing, they are supplementary. But you can leave the apple out. I will have dinner guests on Friday and will make it then.
