There are people love Mustard in potato salad. You must be from Colorado or one of those places? People are different in different parts of the world like different things.

Interesting. Never thought of mixing sour cream into the potato salad, but I often put some on top (after a squirt of rooster sauce/sriracha).

Maybe because of the mustard-based BBQ sauces up there they think mustard in the potato salad would be overkill.

South Carolina had the mustard BBQ sauce. NC had a red peppery vinegar sauce, very veryhot. In the SW etc it's traditional, Ketchup, mustard, Brown sugar etc
