Perhaps I should have said Digby Nova Scotia!

Home to a large scallop and lobster fishing fleet and known worldwide for their famous Digby scallops, visit the town of Digby for a colorful photo of fishing boats in the harbor and sample scallops at one of the many restaurants in the town.

Wolf fish. Not popular in England, much more so in Scandinavia. Not unlike monkfish, but much cheaper.

tried monkfish it may have been overcooked it was very rubbery.

Rubbery? Not just overcooked, then, but maltreated. Squid goes rubbery from mere overcooking. Monkfish doesn't, unless you do something truly wrong with it.

That said, it is naturally more 'meaty' than, say, cod. But it should still be easy to cut and chew.

Many people don't know how to cook fish properly so they figure they don't like it. It couldn't be the way they cook it. 🙂

I don't like oysters, but scallops are always good.

You can even grill them up.

The oysters or the scallops?

I guess you talking about the scallops on the grill. I've shucked the oysters and ate them raw. Most people find that gross.

it seemed a bit chewey not like my fav haddock

Stay off of the molluscs and raw oysters and go with my Sea Bream reco. Trust me on this one!
