    Not sure; it’s has a meaty flesh but is also soft and flakey. Tolerant to heat and overcooking all ideal for a bbq.

    I like the little roasted eels that come in a can, and hope to try larger roasted or grilled river eels someday, but I would advise to avoid sea eels, because they are so full of needle-y bones that they are too much trouble to eat (for me anyway).

    Shark steaks -- it's like getting back at them.

    Red snapper, mackerel (this is often smoked [in a smoker, not a pipe or a roll-up]), salmon.

    Had curried shark in the north of Sri Lanka. Gorgeous.

    I bought a whole dogfish once. Tastes great, but a pain (literally) to skin.
