Why not Muslims and other people of faith? I suppose it is because I assumed that they viewed mankind as a special creation that was made in the image of God and set apart from the animal kingdom.

Nothing separates us from animals; we are animals; check out discovery channel animals eat each other all the time; except herbivores. It is interesting that you thought the idea of being an animal is something agnostic/atheists would shy away from. perhaps the basis for all religions is the self loathing some animals of the genus homo-sapien appear to suffer from.

So if there is precious little seperating animals and humans then I would presume that you defend animal rights like you do human rights.
