And in reply to 1. e4 it will be 1. ... e5 unless I am playing CMSmaster and don't want him to play 1. f4 so then I play 1. ... c5. Nothing else unless I am fooling around when something like 1. ... g5 can be played, but these 2 moves are, in my opinion, blacks best response and signal that he also wants to win.

Everybody's going to give you a different answer, but my opinion is start with e5 for a while to get a feel for good opening principles (you will learn a lot about basic tactics and different positional ideas).
After you have a feel for the basics with the e5 lines, you can graduate to the Sicilian with the more advanced (but more powerful) ideas.
Please don't play the French!
starting with 1. ... e5 is usually best...
the Sicilian can become reallt complicated really fast...
so i don't suggest jumping directly into it
I would suggest Caro-Kann next...
It follows the same principles as the French, but the c5 break is delayed so black can keep an active bishop...
depends on your style...
If you want faster play: French
If you are willing to take a loss in development in exchange for an active piece, Caro-Kann
once you have mastered these...
the Sicilian is yours to begin taming...
I still haven't even graduated to Sicilian, but i am trying to improve play with Caro-Kann...
