"also what is the purpose of god giving creatures a limited ability to adapt?"
I'll give this one a shot.
As you know many many species have not survived and are gone. As you are sayng here, many could not adapt to their surroundings for many reasons, many of which we just don't know why they couldn't.
Look at us humans now as most of us would die if dropped off at the north pole would be dead within a couple hours if not given the right supplies.
That is not our normal inviroment to live in and it would show very quickly.
God originaly created the whole earth to be inhabited as the bible stated and as scientist have discovered with burried tropical vegatation in the much colder latitudes. Mammoths have been uncovered with this still in their mouths.
The earth originally was like a green house with the cloud canopy that covered the entire planet just as the Bible explains.
God also created every living thing to prosper and mulitiply and cover the entire earth with their offspring.
So within this arrangment by God no species had to adapt. The whole earth would have been liveable by all life forms.
Sure there may have been slight temp changes between the equator and the poles and this is why God did create within all living beings the ability to adapt within reason and with boundries to survive any changes that might be presented within it's life.
But the flood caused drastic changes to the planet on many levels and many species could not adapt to that and even today most life can only live within certian areas and conditions or they will die.
Darwin freeked out when he saw the different beaks the finches had at the Galápagos Islands within the same species and said this proved evolution.
No it didn't in the least. It was that God given ability for this bird to adapt to fit it's surroundings. But it is a finch and has always been a finch and will always be a finch.
