There are a lot of opening that give away the center at first. If you don't control the center it doesn't mean the game is over.
they give way to the center, but they are preparing a strike at the center...
look at the Caro-Kann for example...
1. e4 c6
black gives way to the center to set up a move two strike with
2. d4 d5
your line:
1. e4 h5?
2. d4 h4?
3. h3 c6
and white is essentially playing a Caro-Kann with down an extra tempo
black already has to deal with white having more tempi in the regular Caro-Kann, let alone just giving him one more...
horrible line...

take up the caro-kann
you will find your game much easier when you aren't down an unnecessary tempo...
